You wanted to feed raw. The salmonella warnings made you hesitate. Then you saw freeze-dried raw on the shelf and thought: problem solved. Freeze-drying removes the water, the bacteria go with it, right? Not exactly. The reality is more complicated, and misunderstanding it could put your dog, and your family, at risk.

Freeze-dried raw was part of that research, and what we learned applies to any dog. This is not a product review. It is a closer look at what freeze-drying actually does to pathogens, how it compares to frozen raw, and what questions to ask before you buy either one.
What Freeze-Drying Actually Does
Freeze-drying uses a process called lyophilization. The food is frozen solid, then placed in a vacuum chamber where the ice transitions directly from solid to vapor without ever becoming liquid. The result is food that is shelf-stable, lightweight, and reconstitutes quickly with water.
Here is the critical point: freeze-drying is a preservation method, not a sterilization method. The FDA is clear that raw pet food carries real pathogen risk, and freezing and drying do not reliably eliminate it. The same holds for listeria and most strains of E. coli. Freezing can reduce some organisms, but it is not a dependable way to eliminate the pathogens that cause most raw pet food recalls. Removing water can limit microbial growth, but surviving pathogens may remain viable, which means rehydrated product should still be handled as a raw food.
This is not a flaw in the process. It is simply what freeze-drying is. You are removing water, not sanitizing the food.
So What Do Brands Do About Pathogens?
Here is where the conversation gets more nuanced. The reputable freeze-dried raw brands recognize that preservation alone is not enough. They take one of two secondary steps to address the risk.
The first is High Pressure Processing, usually shortened to HPP. This uses extremely high water pressure, around 87,000 pounds per square inch, roughly five times the pressure at the deepest point in the ocean, to physically rupture bacterial cell walls. Published research in the Journal of Food Protection has shown HPP can achieve five-log reductions of salmonella and shiga toxin-producing E. coli in raw pet foods at standard processing conditions. Listeria monocytogenes tends to be more HPP-resistant and may require additional controls, such as lactic acid formulation, to hit the same reduction levels. Some brands disclose HPP use on their packaging or websites, but pathogen-control practices vary by manufacturer and should be verified directly.
The second is test-and-hold, in which manufacturers test finished batches for salmonella, listeria, and E. coli before release. If a batch tests positive, it does not ship. This is a quality-control step, not a kill step. It depends on consistent testing protocol and honest reporting, and it only catches what the sample happens to find.
Not every brand does either of these things. Reading the label and, if needed, contacting the manufacturer directly is the only way to know what you are buying.
How Frozen Raw Compares
Frozen raw operates under the same biological reality. Freezing food inhibits bacterial growth, but it does not reliably kill the pathogens most associated with raw pet food recalls. A piece of frozen raw chicken sitting in your freezer is not sterile, and the pathogens in it are still viable when it thaws. Both FDA and AVMA guidance warn that raw or undercooked animal-source diets can carry pathogen risks for pets and people.
Both formats require the same fundamental handling discipline. Wash your hands, clean surfaces that touch the food, keep bowls and utensils sanitized, and store the product away from human food.
One nuance worth flagging. A 2020 study in Veterinary World that looked at Thai commercial raw pet foods found that 90 percent of the frozen raw samples exceeded acceptable bacterial limits, while the two freeze-dried products tested came in below those limits. It was a small study with only two freeze-dried samples, so it cannot settle the question, but it suggests that lower-moisture finished product may sometimes carry lower measured bacterial loads than frozen raw of similar origin. That is not the same as saying freeze-dried is safe by definition. It depends entirely on source quality, processing, and handling. In practice, that means the label on the bag matters more than the format.
The Real Differences That Are Not About Safety
Once you accept that neither format is sterile, the decision shifts. It is no longer a safety contest. It is a lifestyle-fit question.
Shelf life is the biggest one. Freeze-dried food is shelf-stable in its sealed bag, often for 18 to 24 months or longer. Frozen raw needs a consistently cold freezer, and if yours fails, the food is gone. Travel is where freeze-dried really wins.
Cost per pound is the next. Freeze-dried raw is consistently more expensive than frozen raw. Depending on the brand and protein source, you can pay two to three times more per pound than an equivalent frozen product. The convenience premium is real.
Rehydration is another. Freeze-dried is typically served with water added, though some dogs eat it dry as a topper or training treat.
Versatility tips toward freeze-dried. It works as a full meal, a kibble topper, or a training reward. Frozen raw is primarily a full meal and does not crumble cleanly into kibble the way freeze-dried pieces do.
Handling after opening goes the other way. Most manufacturers recommend using freeze-dried food within 30 days of opening, though some brands extend that to a few months with proper resealing. Frozen raw keeps for months sealed, and once thawed should be refrigerated and used within a few days per the manufacturer’s instructions.
Who Each Format Serves Better
Freeze-dried raw is not superior to frozen raw in a blanket sense. It is a different tool for a different situation.
Choose freeze-dried if you travel frequently, live in a small space without a large freezer, want a portable topper for fresh or kibble diets, or prefer the convenience of scooping and serving without thawing time. Pathogen risk depends heavily on the manufacturer’s sourcing, controls, and testing, not on whether the product is frozen or freeze-dried, so look for HPP or test-and-hold on the label.
Choose frozen raw if your primary concern is cost per serving, you feed large volumes, you have a reliable deep freezer, and you are comfortable planning meals around thawing schedules. The pathogen considerations are similar at the raw ingredient level, and both depend on careful handling once the food is in your kitchen. If you are going the frozen route, this is where we landed. How to Read a Freeze-Dried Raw Label

Beyond those: Does the label mention HPP, test-and-hold, or another validated kill step? Does the manufacturer publish testing results or third-party audits by lot number? Does the fat and protein content fit your dog’s life stage? And are sourcing and handling instructions clear?
If a brand cannot answer the testing question, that is worth noting. Reputable manufacturers in this space tend to be transparent because they know safety is on every buyer’s mind.
The Decision Framework
Here is the honest summary. Freeze-drying and freezing both preserve food. Neither reliably kills the pathogens most associated with raw pet food recalls. The real risk in either format comes from contamination at the source and handling in your home. No amount of technology replaces kitchen hygiene.
Freeze-dried raw is more convenient, more expensive, and, when produced by a brand with validated pathogen controls like HPP or test-and-hold, potentially lower in pathogen load at the point of opening. It is not automatically safer to feed than frozen raw. That distinction depends entirely on the specific manufacturer and how carefully you handle the product at home.
If you are considering either format for a dog with a compromised immune system, a puppy, or a senior dog, it is worth a conversation with your veterinarian first. Some veterinary nutritionists have strong views on raw feeding in immunocompromised dogs, and that guidance matters more than any article.
For healthy adult dogs, either format can be part of a balanced diet if you go in with your eyes open. The choice between freeze-dried and frozen raw is not a simple one, and anyone telling you it is clearly one or the other is probably trying to sell you something.
